Well, the moving mini-beam of light in the video isn't in one shot, they have to do many shots and they simply compile them together to form a moving picture, so they can't right now do a "single photon" as it would just one differnent ones captured and stiched together. At least not until they can make a "real" 1 trillion frames/sec camera where they don't have to stitch together multiple passes =)
