Say I want to try out the new beta. Will it install a bootloader allowing me to choose which OS I want to install. And, if I decide to go back to XP, is there a painless way of removing the Vista Beta and restoring things to the state before I installed the Beta?

it should put in a bootloader like XP/NT/2003/2000 does, well, the builds I have played with seemed to have done that i believe
it is best installing the OS onto a seperate partition so you can later remove it without pain

Vista uses a new bootloader which will replace your existing one. The new one uses higher resolution fonts, and is, I believe, part of the move towards EFI. The new bootloader should detect your existing Windows installations and will give you the option of "Legacy (pre-Longhorn) operating systems" which will then take you to the old boot loader screen where you can choose which older OS to load.
If you don't want the new bootloader any more you can run
"fixntfs -xp" from the "boot" folder on your primary partition. To get rid of the beta you can just reformat the partition you installed it onto. -

I simply deleted all files vista installed on my primary partition. worked also well
