I dunno about a 'full windows interface', but the original xbox runs Win2k Embedded (or some form of it).There are some homebrew apps (like XBMC and KAI) that allegedly hook into the embedded system through API Calls.
Also, you can very well install Linux on an original Xbox and have it do anything you like.
The original xboxes controller ports are just modified USB ports and retrofitting a keyboard into one is a fairly simple task.
And you can write homebrew (although clunkily because MS were baztardz about releasing genuine XDK's)
