When they add a "Don't let this user ever change an extension because no matter how many times you explain that, just because it makes the icon change into a PDF one it isn't changing the file into a PDF, they won't learn" option, then I'll be happy.

How about a "kick the person who decided to hide file extensions by deafult" checkbox too?
People need to learn to be organized so hiding something as important as file extensions is just dumb. -
Hiding the file extensions is not that bad, I can still see the type of each file in Explorer. But when editing a filename the extension should be visible and only the name of the file should be selected.

Exactly.. but I think it might confuse those that don't even know what an extension is..
Rename.. whats this .jpg?
It's more likely you would get users who removed the extension in this case..
