Credit cards are not accepted everywhere. Chip cards are even more complex (there are multiple competing systems, none are accepted everywhere).

Plus, I have to pay interest if I pay by credit card.

I rarely used cash back in the Netherlands. I got by almost exclusively using PIN and chip. But in Japan, they just love to use cash, you can't get around it.
