The default WP7 templates are to get you going on the standard stuff like font sizes, panorama controls, pivot controls, margins, button styles.

You can still make them look nice, just as long as they have the same "feel", the same usability, the same flow of things. Look at the Twitter app, Facebook app, etc. They have their branding, colours...but you look at them, and they're Windows Phone 7 apps.
