As for cost will Microsoft offer me a version of W8 with the touch support ripped out so on my desktop PC I don't have to pay for the R&D and coding time that went into that part of Windows? W8 is very modular after all...

No they won't offer you that, but you can always stay win Win7 if you don't like Win8.

On the other hand, they will almost certainly have a DVD player in the app-store if you want to pay for it though.
