I've got a computer that seems to have Excel 2007 (only Excel is installed) stuck in 16 color mode. The desktop itself is set to 32-bit. Is there a registry setting or something that may have gotten messed up?

Umm? Maybe "compatibility mode"? Right click the Excel shortcut and see if you have a "Compatibility" tab. See what options you have there.

Work hard; increase production; prevent accidents, and be happy.
Office 2007 goes into 16-color mode if you have High Contrast mode enabled. Check for that.
Note that enabling the High Contrast themes doesn't necessarily mean HC mode is enabled, and vice-versa. See the Accessibility control panel.
